Main Dishes - Salmon Scramble

1 cup chopped broccoli (fresh or frozen).

1 medium egg.

½ teaspoon Hellmann's or Best Foods tartar sauce.

1½ teaspoons yellow cornmeal.

2 Keebler low-salt soda crackers, crumbled.

2 ounces canned salmon, drained.
In a microwave-safe covered bowl, steam the broccoli for 5
minutes, or until tender. Drain any moisture from the broccoli; add it to a non
stick skillet treated with nonstick spray and dry-saute it to remove any excess
moisture.
In another bowl, beat the egg and mix in the tartar sauce,
cornmeal, cracker crumbs and salmon. Pour the salmon mixture over the broccoli
and toss to mix. Cook over medium-low heat until the egg is done, stirring the
mixture occasionally with a spatula.
